Ingredients For andouille sausage creole on cheesy creole grits

  • 1/4 c
    vegetable oil
  • 1/4 c
    all purpose flour
  • 1 1/2 c
    onions, chopped
  • 1 Tbsp
    garlic, chopped
  • 1 lg
    green pepper, chopped
  • 1/2 c
    celery, chopped
  • 3/4 c
    green onions
  • 1 - 14 1/2 oz
    can - diced tomatoes
  • 1 - 8 oz. can
    tomato sauce
  • 1 - 6 oz. can
    tomato paste
  • 1/2 tsp
    red pepper flakes
  • 1 1/2 tsp
    seasoning salt
  • 2
    bay leaves
  • 1 c
    water
  • 1 tsp
    tabasco
  • 1 Tbsp
    lemon juice
  • 2 tsp
    worcestershire sauce
  • 1 1/2 lb
    andouille sausage, sliced
  • 1 Tbsp
    parsley, fresh, chopped
  • CHEESY CREOLE GRITS:
  • 3 c
    water
  • 1 c
    milk
  • 1 Tbsp
    creole seasoning
  • 1 tsp
    salt
  • 1 c
    quick cooking grits
  • 2 Tbsp
    butter, cold
  • 1 c
    cheddar cheese, shredded

How To Make andouille sausage creole on cheesy creole grits

    Combine oil & flour in a dutch oven; cook over mediume heat, stirring, until mixture is golden colored about 10 - 15 minutes. Add onion, garlic, green pepper, celery & green onions. Cook, stirring often, 10 minutes or more until vegetables are tender.

    Stir in tomatoes, tomato sauce, tomato paste, red pepper flakes, seasoning salt, bay leaves, 1 C water, tabasco, lemon juice, worcestershire sauce & sausage. Bring to a boil, lower the heat & cover. Simmer for 30 minutes, stirring occasionally. Remove the bay leaves. Garnish with parsley & serve over cheesy creole grits.

    CHEESY CREOLE GRITS: In a large saucepot combine 3 C of water, milk, creole seasoning & salt. Bring to boil.

    Whisking, add grits in a slow steady stream, but do not stop stirring. Reduce heat to medium-low & cover, stirring every minute until thickened, about 5 - 7 minutes.

    Remove from the heat & stir in butter & cheese.
