This is a beautiful and elegant chili made with black lentils known as the caviar of lentil's. I'm a southern girl so I had to add some Virginia Country Ham for that down home taste. country ham, soaked & diced

half cooked duck deboned & chopped

white hominy, drained
15 oz
diced tomatoes

colorful bell peppers, chopped

chipotle in adobo sauce, chopped (more or less)

tomato & chili cocktail (or tomato juice)
1/2 bunch
cilantro stems chopped
2 can(s)
green chiles, diced

onion, chopped

roasted garlic, chopped

chili powder

oregano, dried

Directions Step-By-Step

get ingredients ready
add diced country ham, duck bones, cilantro chopped stems, onions, garlic & 1 1/2 cups of water to a large stock pot. bring to a simmer. cook ham for 30 minutes or until tender
remove the duck bones from the pot and throw away. add lentils, duck meat and oregano to pot. simmer for 20 minutes. stir frequently
add remaining ingredients. bring to a boil, reduce heat to medium-low and simmer for 20-30 minutes, until lentils are tender
garnish and serve
