Okay, you’ve got this hankering for pizza; however, you don’t want to order takeaway (heaven forbid), and you don’t want to go through the process of making the dough and all the other bits and bobs necessary to producing a good pie. What do you do? Well, you get yourself an ovenproof dish, or a small skillet and throw a pizza together. And there is an excellent chance that you have all the ingredients on hand. So, you ready… Let’s get into the kitchen.

Ingredients For throw together pizza in a bowl or skillet

  • 1 Tbsp
    olive oil, extra virgin, divided
  • 1/2 Tbsp
    sweet butter, unsalted
  • 1 c
    crusty bread, torn in pieces (like an old baguette)
  • 1/4 c
    tomato sauce or crushed tomatoes
  • 2 oz
    fresh mozzarella
  • 2 slice
    provolone cheese
  • 1/4 c
    parmesan romano, grated
  • 2 - 3 oz
    italian sausage, cooked and crumbled
  • 6 - 8 slice
    pepperoni thinly sliced
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • dried oregano, to taste

How To Make throw together pizza in a bowl or skillet

    Gather your ingredients.

    Place a rack in the middle position, and preheat the oven to 450f (330c).

    Take an ovenproof dish, or small serving skillet about 6 inches (15cm) in diameter, and coat with 1/2 tablespoon of the olive oil.

    In a small pan, melt the other 1/2-tablespoon of olive oil with the butter.

    Toss the bread with the butter/oil mixture, and add to the bottom of the pan (or dish).

    Chef's Note: Mixing the oil with the bits of bread gives this dish a flavor reminiscent of the small mom-and-pop restaurants dotting the hills that surround Tuscany. As a matter of fact, the bones of this recipe came from one of those restaurants on a trip I made there a little over a year ago. Make sure you use the freshest "extra virgin" olive oil you have available. It will really make a difference.

    Sprinkle the bread mixture with some dried oregano.

    Dot the bread with the sauce.

    Add the Parmesan cheese.

    Add the sausage.

    Chef’s Note: Season with some salt, and pepper, if desired.

    Add the mozzarella.

    Add the pepperoni.

    Cover with the provolone.

    Place in the preheated oven until the cheese is melted and begins to get those yummy brown spots on top, about 20 to 25 minutes.
