Ingredients For zumba pasta primavera

  • 1 tsp
    olive oil, extra virgin
  • 1/2 c
    red onion, thinly sliced
  • 1 clove
    garlic, minced
  • 1 c
    zucchini or yellow squash, cut into 1/2 moons
  • 1/2 c
    red bell pepper, cut into strips
  • 1 c
    whole wheat penne pasta, cooked
  • 4 oz
    shrimp, peeled, deveined & tails off
  • 4
    cherry tomatoes, cut in 1/2
  • 1 1/2 tsp
    basil, dried
  • pepper, to taste

How To Make zumba pasta primavera

  • 1
    Heat oil in saute pan over medium heat & add onions. Cook until softened, about 3 - 4 minutes & then add garlic, zucchini & peppers. Cook vegetables for another 4 - 5 minutes. Add shrimp & tomatoes & cook, stirring continuously, until shrimp is pink, about 3 - 4 minutes. Add pasta & stir just until heated through. Top with basil & season with pepper.
