Ingredients
- 1 teaspoon olive oil, extra-virgin
- 1/2 cup red onion, thinly sliced
- 1 clove garlic, minced
- 1 cup zucchini or yellow squash, cut into 1/2 moons
- 1/2 cup red bell pepper, cut into strips
- 1 cup whole wheat penne pasta, cooked
- 4 ounces shrimp, peeled, deveined & tails off
- 4 cherry tomatoes, cut in 1/2
- 1 1/2 teaspoons basil, dried
- pepper, to taste

Step 1Heat oil in saute pan over medium heat & add onions. Cook until softened, about 3 - 4 minutes & then add garlic, zucchini & peppers. Cook vegetables for another 4 - 5 minutes. Add shrimp & tomatoes & cook, stirring continuously, until shrimp is pink, about 3 - 4 minutes. Add pasta & stir just until heated through. Top with basil & season with pepper.
