This is like a pasta version of a Caprese sandwich! Simple and so good.

Ingredients For tomato basil pasta

  • 1/2 lb
    fettuccine pasta
  • 2
    medium sized ripe tomatoes
  • 3
    cloves garlic, chopped
  • 6-8
    basil leaves, cut into thin ribbons
  • 2 Tbsp
    olive oil
  • kosher salt and fresh ground pepper to taste
  • parmesan cheese, grated

How To Make tomato basil pasta

  • 1
    Roughly chop the tomatoes and remove the seeds.
  • 2
    Put the tomatoes in a bowl with the garlic, basil and olive oil.
  • 3
    Season with salt and pepper.
  • 4
    Drain pasta, add to bowl and toss well with tomato mixture.
  • 5
    Top with tomato, parmesan cheese and another few grinds of pepper.
