Ingredients For taco pasta
-
8 ozwagon wheel pasta (or whatever you like if you can't find it)

1 lbground beef, lean (optional)
-
1 - 16 oz. jartaco sauce, heat - to your liking
-
1 - 16 oz. jarsalsa, heat - to your liking
-
1 pkgtaco seasoning mix
-
1 canblack beans
-
1 canmexicorn or fiesta corn
-
4 cmexican style shredded cheese blend
-
avocados (a must!)
-
sour cream (a must!)
-
cilantro, fresh (optional)
How To Make taco pasta

1Cook pasta according to directions on package. Drain, reserve 1 C pasta water.

2Meanwhile, in a large pot over medium-high heat, brown beef & taco seasoning.

3Once beef is browned, stir in taco sauce, salsa, beans & mexicorn; stirring until hot.

4Stir in drained pasta, 1/2 C cheese & reserved pasta water. Cook over low heat until heated through, 1 - 2 minutes.

5Transfer to serving dish. Sprinkle with remaining 1/2 C cheese. Garnish with sour cream, sliced avocado & cilantro.
