Ingredients For taco pasta

  • 8 oz
    wagon wheel pasta (or whatever you like if you can't find it)
  • 1 lb
    ground beef, lean (optional)
  • 1 - 16 oz. jar
    taco sauce, heat - to your liking
  • 1 - 16 oz. jar
    salsa, heat - to your liking
  • 1 pkg
    taco seasoning mix
  • 1 can
    black beans
  • 1 can
    mexicorn or fiesta corn
  • 4 c
    mexican style shredded cheese blend
  • avocados (a must!)
  • sour cream (a must!)
  • cilantro, fresh (optional)

How To Make taco pasta

    Cook pasta according to directions on package. Drain, reserve 1 C pasta water.

    Meanwhile, in a large pot over medium-high heat, brown beef & taco seasoning.

    Once beef is browned, stir in taco sauce, salsa, beans & mexicorn; stirring until hot.

    Stir in drained pasta, 1/2 C cheese & reserved pasta water. Cook over low heat until heated through, 1 - 2 minutes.

    Transfer to serving dish. Sprinkle with remaining 1/2 C cheese. Garnish with sour cream, sliced avocado & cilantro.
