This is a take off from Rene Graziano's (Mofia Wives) gravy recipe. I've made a few changes and we're pretty satisfied with it now. Great with Italian sausages or meatballs made with beef, pork and veal. If you can't find, or don't want to use veal I substitute ground turkey. I'm going to post the meatball recipe also that goes so well with this.

Ingredients For sunday gravy for pasta

  • 2 Tbsp
    olive oil
  • 2 c
    chopped onion
  • 2 Tbsp
    chopped garlic
  • 1/4 cup c
    fresh parsley, chopped
  • 2 Tbsp
    mrs. dash italian seasoning
  • 3 sprig
    thyme
  • 1/2 tsp
    sea salt
  • 1/2 tsp
    freshly ground pepper
  • 28 oz
    can crushed tomatoes
  • 3-28 oz
    cans whole roma tomatoes
  • 6 oz
    tomato paste
  • 2 sm
    bay leaves
  • 1 Tbsp
    sugar, or to taste

How To Make sunday gravy for pasta

    heat olive oil over medium heat in a stock pot; add the onions and cook until slightly soft; add the garlic and cook a few more minutes until it is soft. Do not let it get brown.

    Add the parsley and all the seasonings, except the bay leaf and stir to combine.

    Add the whole tomatoes, breaking them up with your fingers, or use a potato masher to help break into pieces; add the crushed tomaotes and the tomato paste; add the bay leaf.

    Simmer for about 15 minutes. Taste at this point and sugar as tastes dictate. Now you will add your meatballs if using. Continue on top of the stove for about 1-1/2 to 2 hours.
