Stephanie's StoryTrying to incorporate more veggies into my childrens diet. Ive tried everything from adding cheese to potato chips lol. Here's a casserole I whipped up the other night and didn't tell my children what was in it. They loved it!!! Hence the name SHHHH!!
left over squash casserole (use your favorite)
whole wheat rigatoni
favorite spaghetti sauce
1Warm up left over squash casserole. Should be several cups worth. Using a blender (I use a hand stick) puree squash till nice and smooth
2In a pan brown your beef and add 3/4 of your pasta sauce. Let simmer for about 15 minutes. Add your favorite seasoning (mine - s&p, garlic, onion, red wine and fresh basil)
3While the sauce simmer cook pasta to al dente. Drain
4Preheat oven to 350. In a 9x13 pan add the remaining pasta sauce, the blended squash casserole, pasta, meat suace, mozzarella cheese, pasta, meat sauce then sprinkle top with parmesean cheese. Cover with foil and bake for 30 minutes or until bubbly.
