This salad is so good even the pre-schoolers ate it. It's wonderful for a quick, easy meal. Start stacking!

In spring and summer when cucumbers and tomatoes are at their freshest, this is a super easy salad to whip up. It's like a pasta salad meets a summer salad. But with the addition of tuna, it is a great light meal if you're serving a crowd or a potluck. The pasta is lightly coated with dressing and that's the base for the salad. Chunks of cucumber add a nice crunch and tomatoes add to the fresh feel. It's very basic, so you could add many more ingredients like shredded cheese, black olives, and red onion... the possibilities are endless. A quick, easy, and tasty salad.

Ingredients For spring salad stack-up

  • 2 c
    plain corkscrew pasta, cooked and drained
  • 2 Tbsp
    crushed parsley flakes
  • 2 c
    chopped cucumber
  • 2 c
    tomato, wedges or chopped
  • 3 can
    tuna, drained (5 oz each)
  • 1 bag
    lettuce mix
  • buttermilk ranch salad dressing

For presentation in the photos, we used a whole box of pasta and 1/2 cup of dressing. If you only make 2 cups of pasta, 1/4 cup of dressing should be enough.
  • Cooked corkscrew pasta in a collander.

    Cook pasta according to package directions.
  • Cooked pasta in a bowl with parsley and coated in dressing.

    Rinse with cool water, and drain. Toss gently with parsley flakes and enough dressing to coat lightly. Spread evenly in the bottom of a large serving bowl.
  • Lettuce added to the bowl.

    Spread lettuce mix on top of the cooked pasta in the bowl.
  • Adding a layer of chopped cucumbers.

    Chop the cucumber and layer over the lettuce.
  • Flaked tuna fish added to the bowl.

    Drain tuna. Flake gently with a fork and distribute evenly over the top of the cucumber in the bowl.
  • Salad topped with tomatoes.

    Top with tomato.
  • Dressing drizzled over the salad when serving.

    Serve with dressing. NOTE: I've also served this salad "buffet style" for casual parties, allowing everyone to create their own stack. :)
