Spinach Fettuccine with Veggies and Cheese

Ingredients

12 oz
spinach fettuccine
1 Tbsp
olive oil
1/2 c
sliced red onion
2 clove
garlic, minced
2 c
asparagus cut into 1-inch pieces
1
medium carrot, cut diagonally into 1/4-inch-thick slices
1 c
sliced mushrooms, any kind
1/2 tsp
salt
1/2 tsp
black pepper
28 oz
can diced tomatoes
1 c
mozzarella cheese, shredded

Step-By-Step

1Cook the pasta according to the package directions, then drain.
2Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, for 1 minute. Add the asparagus, carrot, and mushrooms and cook, stirring a few times, until the vegetables are crisp-tender, about 5 minutes. Add the salt and pepper, stir to coat.
3Add tomatoes and cooked fettuccine to vegetable medley. Simmer for 2 minutes. Serve topped with mozzarella cheese.
