Spinach and Cheese Lasagna

Great Lasagna you do not miss the meat but ground chicken could be added if feeding friends or family who like chicken.

vegetable oil
1 c
finely chopped cooking onion
2 clove
minced garlic
3/4 tsp
dried basil or 2 tbs fresh chopped basil
1 can(s)
28 ounce can diced tomatoes undrained
1 can(s)
8 ounce tomato paste
5 Tbsp
chopped parsley
lasagna noodles
1 pkg
10 ounce frozen spinach thawed and well drained
2 c
cottage cheese, fat-free
2 c
grated asiago cheese
1 c
grated parmesan cheese

Directions Step-By-Step

put the oil in pot heat oil and add onions, garlic and basil stir constantly til vegies are tender.add tomatoes, tomato paste and parsley..mash the tomatoes with potato masher..reduce heat and stir occasionally for about an hour..{I hate stirring for a long time so I put the pot in the oven and cook it for an hour} . I make a salad while the sauce is cooking.
When sauce is cooked remove from heat and set aside cook lasagna according to directions..drain rinse under cold water,,dry noodles on paper towel or kitchen towel.
Mix parsley. s and p with cottage cheese..Pour 1 cup sauce in bottom of baking pan top with 3 lasagna noodles..top with half of the spinach and 1 cup of cottage and 1 cup asiago cheese..top with another layer of lasagna add another layerof spinach and the cheeses and put on the last 3 lasagna noodled and top with remaining sauce and sprinkle with the Parmesan cheese.
Heat oven to 350F..cover the lasagna with foil and bake for 30 minutes..remove foil and bake for another 30 minutes...coll at least 10 mins before serving{Lasagna cuts more easily. serve with a salad and garlic bread.
