Ingredients For spicy peanut noodles

  • 8 oz
    linguine pasta
  • 1/3 c
    peanut butter, creamy
  • 1/4 c
    water
  • 2 Tbsp
    soy sauce, low sodium
  • 1 1/2 Tbsp
    rice wine vinegar
  • 1 - 2 tsp
    chile paste
  • 4 - 5 clove
    garlic, minced
  • 1 tsp
    sugar
  • 1 sm
    red bell pepper, cut into thin strips
  • 3/4 c
    cucumber, seeded & chopped
  • 1/4 c
    green onions, (both greens & whites) sliced diagonally into 1/4
  • 2 Tbsp
    cilantro, fresh, chopped
  • 4
    lime wedges (optional)

How To Make spicy peanut noodles

    Cook linguine according to package directions.

    Meanwhile, combine peanut butter, water, soy sauce, vinegar, chile paste & sugar in a large bowl; whisk until blended. If sauce seems too thick, thin it with a little more water; it should have the consistency of cream.

    Add linguine, bell pepper, cucumber & green onions & toss well. Sprinkle with cilantro. Serve with lime wedges, if desired.
