Ingredients For spaghetti with plum tomatoes

  • 16 oz
    can plum tomatoes
  • 1 lb
    spaghetti or linguini
  • 3 Tbsp
    olive oil, extra virgin
  • 4 clove
    fresh garlic, minced
  • 1 1/2 tsp
    capers
  • 1/2 c
    loosely packed basil leaves (cut into strips)
  • 1/2 can
    fresh moozarella cubed

How To Make spaghetti with plum tomatoes

    Bring 6 quarts lightly salted water to a boil and cook the pasta of your choice according to package directions

    Heat olive oil in a large skillet over medium-high heat. Add tomatoes, their liquid, & the garlic. Saute' for 1 minute. Add capers and toss or stir for 1 minute more.

    Add cooked, drained pasta to the sauce and toss all ingredients well.

    Divide among four bowls and top each bowl with fresh mozzarella and basil chiffonade From start to finish - the entire meal should be on the table in fifteen minutes

    Serve with a side salad and a warm loaf of bread to round out the meal
