Ingredients For spaghetti with plum tomatoes

16 ozcan plum tomatoes

1 lbspaghetti or linguini

3 Tbspolive oil, extra virgin

4 clovefresh garlic, minced

1 1/2 tspcapers
-
1/2 cloosely packed basil leaves (cut into strips)

1/2 canfresh moozarella cubed
How To Make spaghetti with plum tomatoes

1Bring 6 quarts lightly salted water to a boil and cook the pasta of your choice according to package directions

2Heat olive oil in a large skillet over medium-high heat. Add tomatoes, their liquid, & the garlic. Saute' for 1 minute. Add capers and toss or stir for 1 minute more.

3Add cooked, drained pasta to the sauce and toss all ingredients well.

4Divide among four bowls and top each bowl with fresh mozzarella and basil chiffonade From start to finish - the entire meal should be on the table in fifteen minutes

5Serve with a side salad and a warm loaf of bread to round out the meal
