12 oz
extra-firm tofu, cut into 1/2 inch slices
salt and pepper to taste
8 oz
soba noodles
5 oz
baby spinach
1/4 c
bottled ponzu sauce

radishes, thinly sliced
chopped peanuts

Directions Step-By-Step

Cut extra firm tofu into 1/2 inch slices; press dry with paper towels. Season with salt & pepper. Grill on medium-high 10-15 min. covered, turning once. Cut into bite-sized pieces.

Meanwhile cook soba noodles. Place baby spinach in colander in sink; drain hot noodles directly over spinach. Rinse with cold water; drain well.

Toss noodles, spinach, radishes and tofu with ponzu sauce. Top with chopped peanuts.
