Ingredients For pumpkin mac-and-cheese

3 cpenne pasta

2 Tbspunslated butter

2 Tbspflour
-
2 c1% milk

3/4 ccanned pumpkin puree

1 creduced-fat shredded monterey jack cheese

1 cshredded gruyere cheese

1/2 cgrated parmesan cheese

1/4 tspsalt
-
1/8 tspnutmeg
-
1/8 tsppepper
How To Make pumpkin mac-and-cheese

1Heat oven to 375. Spray a 13" x 9" baking pan w/ cooking spray. Cook pasta as directed, drain.

2In saucepan, over medium heat, melt butter. Whisk in flour. Slowly whisk in milk, cook until thickened. Add pumpkin puree and mix well. Remove from heat.

3Add cheeses, salt, nutmeg and pepper. Combine sauce w/ pasta. Pour into pan. Bake, uncovered 25-30 mins, or until golden and bubbly.
