Pumpkin mac-and-cheese

Ingredients

3 c
penne pasta
2 Tbsp
unslated butter
2 Tbsp
flour
2 c
1% milk
3/4 c
canned pumpkin puree
1 c
reduced-fat shredded monterey jack cheese
1 c
shredded gruyere cheese
1/2 c
grated parmesan cheese
1/4 tsp
salt
1/8 tsp
nutmeg
1/8 tsp
pepper

Step-By-Step

1Heat oven to 375. Spray a 13" x 9" baking pan w/ cooking spray. Cook pasta as directed, drain.
2In saucepan, over medium heat, melt butter. Whisk in flour. Slowly whisk in milk, cook until thickened. Add pumpkin puree and mix well. Remove from heat.
3Add cheeses, salt, nutmeg and pepper. Combine sauce w/ pasta. Pour into pan. Bake, uncovered 25-30 mins, or until golden and bubbly.
