Ingredients

  • 1 box elbow macaroni
  • 2 tablespoons olive oil, extra-virgin
  • 1 large onion, diced
  • 8 ounces button mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 pounds bulk Italian sausage
  • 1 bay leaf
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 1/2 cups pizza sauce
  • 1 stick butter, room temperature
  • 16 ounces white cheddar, shredded
  • 8 ounces cream cheese, room temperature
  • 8 ounces mozzarella cheese, shredded

How To Make pizza mac & cheese

  • Step 1
    Cook the pasta to al dente according to the package directions; drain & set aside.
  • Step 2
    Heat the oil in a large skillet over medium heat; add the onion & mushrooms & cook until softened but not browned, 5 minutes, stirring occasionally. Add the garlic & sausage, increase heat up to medium-high & cook until the sausage is browned, 5 minutes, stirring occasionally to break up the meat.
  • Step 3
    Decrease heat down to medium, add the bay leaf, Italian seasoning, salt, pepper & flour & cook 1 minute. Stir in the milk, pizza sauce & butter & cook 2 minutes; add the cheeses & stir constantly until it comes to a simmer. Add the pasta noodles & cook until warmed, 1 minute.
