There was a wonderful restaurant (Gatto's in Tinley Park, IL - http://gattosrestaurant.com/menus/seafood/) that we used to go to when we still lived in IL. Whenever we went there, there was only one thing I got....Perch Limone. I wrote them telling them that I was moving far away & that I would love their recipe for this. I got no response. AARRRGGGHHH! And I was even willing to pay for the recipe. This is not their recipe, but sounds close. But I still want that recipe!!!!

Ingredients For perch li'mone

8ocean perch filets (4 per person, if small)

flour
-
salt and pepper, to taste

1 stickbutter, melted

3 clovegarlic, minced
-
1/8 clemon juice, fresh
-
1 cwhite wine
-
1/2 cheavy cream
-
parsley
-
angel hair pasta
-
slices of lemon for garnish
How To Make perch li'mone

1Cook angel hair pasta according to directions.

2Take a perch filet, flour it on each side, sprinkle with salt & pepper on each side as well.

3Melt butter in skillet with garlic; let it get golden & add the lemon juice.

4Add fish, let it cook for a while (perch is really quick to cook), about 2 - 3 minutes; turn & add parsley, wine & cream & cook for another 2 - 3 minutes.

5Serve over pasta & lemon/cream mixture over fish & pasta.
