Penne with Pink Vodka Sauce

Oh sooo good Tomato, Cheese, Vodka and Cream...need I say more??

1 lb
penne pasta
1 can(s)
(28 oz) of san marzano tomatoes (be sure to look for a label in the can dop certified)
1/2 medium
1 clove
minced garlic
4 - 5
leaves fresh basil
1 tsp
oregano, dried
1/2 c
1/2 c
parmesan cheese
1/2 c
heavy cream
olive oil


1In a large skillet over high add olive oil, allow to heat, turn heat to medium then add garlic and onions. Cook till translucent. Add tomatoes, basil and oregano allow to simmer for 10 minutes
2Place pasta pot on stove and bring to boil. While stirring the sauce. When pasta water begins to boil add a good amount of salt to the water, wait for a rolling boil and add pasta. Cook according to directions on package (about 8 mins)
3While pasta is boiling add vodka allow to cook off (about 2 min) add cream and cheese. Stir and reduce over medium high heat.
4When pasta is done, drain and add to skillet with the sauce. Stir to coat pasta. Plate and add a few leaves of fresh basil.
