Ingredients For penne pasta w/ tomato-red onion sauce

  • 1 Tbsp
    olive oil, extra virgin
  • 1 sm
    red onion, finely chopped
  • 1 tsp
    minced garlic
  • 1-1/4 lb
    cherry tomatoes
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 8 oz
    whole wheat penne pasta
  • 4 Tbsp
    grated parmesan cheese, i used reduced-fat.

    fresh,thinly sliced basil leaves

How To Make penne pasta w/ tomato-red onion sauce

    Heat oil in lg pot over medium heat. Add onion. Cook, stirring until softened, about 5 mins. Add garlic, cook, stirring constantly until fragrant.

    Stir tomatoes, salt & pepper. Cook, stirring occasionally until tomatoes start to get soft and sauce slightly thickens. Transfer sauce to bowl and keep warm.

    Wash pot and cook pasta in pot. Drain. Return pasta to pot. Add sauce, 2 tbsp grated cheese and basil. Toss to combine. Serve sprinkled w/ remaining grated cheese.
