Ingredients

1 1/2 c pasta of choice
1 c chicken pieces
1/2 c onion, chopped
1 c fresh vegetables like french beans, carrots and capsicum chopped
3 Tbsp butter
2 Tbsp cheddar cheese, shredded
1 Tbsp pasta seasoning
salt to taste
FOR WHITE SAUCE
2 Tbsp butter
2 Tbsp refined flour
1 1/2 c milk
1 Tbsp cheddar cheese, shredded
1 Tbsp black pepper poder, flakes
salt to taste

Ruma's Notes:

This is a common pasta recipe that is being cooked by Indian moms for their kids here making sure that they are offered familiar taste. Thus, Italian pasta got some twists in Indian kitchens.

 

Directions

For white sauce, light fry refined flour in butter. Cool and add milk, salt, black pepper powder or flakes, cheese and mix properly. Put on the heat and cook till a boil.

Cook pasta in water till al dente. I add a little oil in water so that pasta does not clump. Drain water and keep aside.

Saute onion and chicken pieces in butter. Cook till chicken is done. Add carrot, french beans, salt and cook till the vegetables are cooked.

Add capsicum and pasta. Mix properly and then mix in the white sauce, pepper, pasta seasoning and the pasta is ready. Garnish with cheese and serve

Sounds very tasty. I will be trying this if the hot weather will just cool off for a day or two. I noticed you use Pasta Seasoning, and was wondering what one you use? Is it Italian style or can you tell us what spices, etc are in it? I was expecting some kind of Indian spices for a different flavor. :)

@Pam, I generally use the normal Italian pasta seasoning that I get in nearby stores. If you would like to add Indian seasoning then you can try cumin powder / coriander powder. You can also use red chilli powder [1/4 tsp] if you like it little spicy. Use cumin powder / coriander powder and chilli powder when you cook the vegetables [step 3]. Then you can garnish with little cilantro along with cheese. Do not use pasta seasoning along with the Indian spices to avoid mixing up of the tastes. Try and enjoy :).

Hi Michelle,

Thank you :). capsicum is bell pepper. You can add different of it to make the dish colorful. Enjoy :)
