everything I like on a loaded bake potato I put in my mac n cheese!!
Even topped with sour cream and onion chips!

Ingredients

1/2 lb
bacon
2 Tbsp
butter
3 Tbsp
flour
1 1/2 c
milk
1/2 c
sour cream
2 c
shredded sharp cheddar
1 c
shredded colby jack cheese
1/4 tsp
cayenne pepper
few pinches of salt
3 Tbsp
fresh chopped chives
1 lb
cooked macaroni al dente

TOPPING

1/2 c
mixed cheese
1 c
crushed sour cream and onion potato chips

Directions Step-By-Step

Cook pasta in salted water for approximately 8mins. Al dente.

In mean time add cut bacon to pan and cook till crisp. Remove from pan. Place and drain on brown paper bag.
Add two tablespoons butter to bacon fat. Melt on med heat. Add 3 tablespoons flour continuely wisking for 3mins. Pour in milk while stiring and bring to bubble. Add in sour cream. Let the milk thicken a bit.

Add in all mixed cheeses except 1/2 cup reserved for top. Season cheese sauce with cayenne pepper and salt, mix then add crispy bacon and chives and stir.

Pour pasta in cheese sauce and mix well.
Pour into baking dish. Top with 1/2 cup remaining cheese then crushed chips.

Bake in oven at 350 for about 25 minutes till bubbly golden brown.
Let rest for five minutes before serving.
