Ingredients

3 oz
uncooked angel hair pasta
1 c
chopped zucchini
1/2 c
chopped fresh mushrooms
1/3 c
chopped green pepper
1/4 c
chopped onion
1 clove
garlic, minced
2 tsp
olive oil
1 c
italian diced tomatoes
6
pitted ripe olives, halved
1/8 Tbsp
pepper
1/4 c
crumbled reduced-fat feta cheese
1 Tbsp
shredded parmesan cheese

Directions Step-By-Step

Cook pasta according to package directions.

Meanwhile, in a large skillet, saute the zucchini, mushrooms, green pepper, onion & garlic in oil until vegetables are crisp-tender.

Stir in the tomatoes, olives & pepper, heat through.

Drain pasta, divide between two plates.

Top with vegetable mixture and cheeses.

TIP: Add any leftover tomatoes to your favorite pasta sauce or use as a topping for pizza.
