12manicotti shells

1 Tbspparsley, finely chopped sprigs

2 Tbspbasil, freshly torn in pieces

1egg, beaten (optional)

1/4 cspinach, thawed and drained
-
1/4 cparmesan cheese, grated
-
1/2 cparmesan cheese, grated
-
3/4 cmozzarella cheese, shredded
-
2 cmozzarella cheese, shredded
-
2 cricotta cheese
-
2 Tbspolive oil
-
26 ozmarinara sauce
How To Make manicotti florentine

1Preheat oven to 350.

2Cook noodles according to directions; drain, transfer to pan of cold water - Add 2 tablespoons olive oil to prevent sticking.

3Combine remaining ingredients (except marinara sauce and reserved cheese) in medium bowl and mix well.

4Pour 2 cups marinara sauce in a 9x13 pan (or glass).

5Pat excess water from shells, fill with cheese, spinach mixture and lay in pan.

6Pour remaining sauce over shells and sprinkle with reserved cheese; bake 15-20 minutes uncovered.

7NOTE: You can omit egg and salt but increase Ricotta cheese to 2 cups and Mozzarella cheese to 2 cups in bowl - needed to fill 12 shells.
