Ingredients For greek mac & cheese

1/4 colive oil, extra virgin

2 lgonions, finely chopped

4 - 5 clovegarlic, minced
-
2 lbground beef (or lamb)

2 ctomato puree
-
1 Tbsporegano, dried
-
1cinnamon stick
-
2bay leaves
-
1/4 tspfreshly grated nutmeg
-
salt & pepper, to taste
-
1 boxmacaroni, elbow
-
1/2 cbutter
-
1/2 call purpose flour
-
1 qtmilk
-
1 pinchfreshly grated nutmeg
-
2 cpeccorino cheese, grated
-
5 x lgeggs
-
1 cpanko bread crumbs
How To Make greek mac & cheese

1Heat oil in large skilet over medium heat. Add onions; cook until softened, about 5 minutes. Add garlic & meat of choice; breaking up any lumps with spoon. Stir in puree, oregano, cinnamon, bay leaves, nutmeg, 1 tsp salt & 1/4 tsp pepper. Cover; cook over medium heat, about 2 minutes. Uncover; cook until most liquid has evaporated, about 10 - 15 minutes. Remove from heat; discard cinnamon stick & bay leaves.

2Meanwhile, cook macaroni according to directions on package to al dente. Drain & rinse with cold water. Set aside.

3Preheat oven to 350 degrees F. Melt butter in large skillet over medium heat. Stir in flour until mixture bubbles, about 2 - 3 minutes. Rapidly stir in milk & nutmeg; cook until simmering, thick & smooth. Stir in 1 C cheese until blended. Remove from heat; cool.

4In a medium bowl, add eggs; whisking to combine & whisk in a couple of spoonfuls of warm sauce. Rapidly beat egg mixture into rest of sauce.

5ASSEMBLY: Butter a 3" deep 13" x 9" baking dish. Place 1/2 of macaroni in dish; sprinkle with 1/2 of cheese. Top with meat mixture; then remaining macaroni & 1/2 C cheese. Top with cheese sauce; sprinkle panko over evenly. Bake 45 - 60 minutes or until lightly browned. Let rest 20 minutes before serving. NOTE: Can be assembled 1 day in advance, refrigerated, then baked when needed; add 20 minutes to cooking time.
