goulash, "bumpa's recipe"

My father-in-law, Paul,was helpful in the kitchen,and as his wife was a teacher and she got home close to supper-time, he would prepare this meal. We loved his nickname,Bumpa, which is what my son called him, and we continued to refer to him that way forever. This is rather like the American chop-suey, but not so spicy.

Ingredients For goulash, "bumpa's recipe"

  • 1 lb
    or more, ground beef, browned
  • 1 pkg
    or 1/2 pkg. egg noodles/ or elbow macaroni cooked
  • 1 md
    onion, sliced and sauteed in oil
  • 1 md
    can of tomato sauce, 14-16 ounces
  • 1 lb
    fresh carrots, sliced; steamed or boiled briefly with the meat,onions and celery;
  • 1/2 c
    sliced celery sauteed with onions;
  • 1/2 c
    grated cheese, *optional
  • salt and pepper, to taste
  • 1 c
    water added to the meat,veggies and tomato sauce.

How To Make goulash, "bumpa's recipe"

    Preheat the oven to 350 degrees and grease a baking casserole (3 qts., or a 9"X13" pan).

    Boil water and add noodles,cook according to box directions, drain, place in greased baking pan prior to baking.

    Brown ground meat in a small amount of butter or oil; add celery and onions and cook until tender. Add carrots, water and tomato sauce; continue cooking,when noodles are drained combine all in casserole or baking pan. Season with salt and pepper if desired, or add a pinch of red pepper flakes and sprinkle with grated cheese if desired.

    Bake for about 20 mins. or longer just until golden on top. It's great served with a crusty bread and a small salad, and dessert if there's any room.
