I make this when I need a quick meal for a covered dish or when we want something lite. Paired with a green salad or some crusty bread its a filling meal

Ingredients

2 1/2 c
penne pasta
1 Tbsp
olive oil, light
3 clove
garlic finely chopped
4 medium
tomatoes skins removed and coarsely chopped
4
basil, fresh roughly chopped
1/2 Tbsp
sea salt
1 Tbsp
black pepper

Directions Step-By-Step

Cook and drain pasta as directed on package. While pasta is cooking; heat oil in skillet over medium heat. Cook garlic in oil 30 seconds, stirring frequently. Stir in tomatoes. Cook 5 to 10 minutes, stirring frequently, until tomatoes are soft and sauce slightly thickened. Stir in basil, salt and pepper. Cook 1 minute. Serve sauce over pasta.
