Ingredients For g-man's elbow goulash

  • 1 lb
    dry elbow pasta ( cooked but firm )
  • 1-1 1/4 lb
    ground beef ( or meat loaf mix )
  • 1 can
    campbells condensed tomato soup
  • 1 jar
    beef gravy (heinz)
  • 1 Tbsp
    "better than bullion" beef base
  • 1 can
    petite diced tomatoes drained ( drain but keep liquid )
  • 2 Tbsp
    tomato paste
  • 1 md
    yellow or white onion diced medium
  • 1 md
    carrot peeled and shredded
  • 2 lg
    ribs celery diced medium
  • 1/2
    red and 1/2 green med/small bell peppers diced medium
  • 1/4 c
    red wine (optional ) you can sub. the liquid drained from diced toms.
  • 2 tsp
    worcestershire sauce
  • 1 Tbsp
    hot sauce of choice( i prefer franks for this recipe )
  • 1 tsp
    1 heavy tea. each dried thyme & dried basil
  • 2 Tbsp
    olive oil ( or any oil )
  • 2 Tbsp
    + 1 heavy pinch salt(kosher)
  • black pepper to taste
  • grated romano cheese as desired

How To Make g-man's elbow goulash

    bring pasta water to a boil with 2 Tbl. salt but don't add pasta until sauce is simmering for last 15 min.

    in high sided 12" saute pan over med.high heat saute peppers, celery ,carrot and onion with a good pinch of salt and 2 Tbl. of olive oil until onion is translucent(about 5 min.).

    add burger and cook untill done thru and browned slightly(about 10 min.).

    add Tom. paste and beef base & cook for about 3 min.

    add wine and let cook another 2 min.

    add diced toms. Thyme & Basil , soup , beef gravy , Worcestershire & hot sauce.

    reduce heat and simmer gently for 15 min.-

    after sauce has simmered 5 min. add pasta to boiling water, boil until almost but not quite done (time depends on how soft you usually cook your pasta but about 10 min.).

    drain (but don't rinse) pasta and add to simmering sauce

    simmer for another 5 min. stiring often

    if sauce seems to dry add retained tomato liquid one Tbl at a time until sauce is as wet looking as you like.

    serve with fresh ground black pepper & grated Romano cheese to taste
