Fettuccine and Spinach

Ingredients

8 oz
fettuccine, cooked and drained
10 oz
frozen spinach, chopped
1 clove
garlic, finely chopped
1/4 c
olive oil
1/2 c
chicken or vegetable broth
1 tsp
dried basil
1 c
cottage cheese
1/2 tsp
salt
1/4 c
grated parmesan or romano
1 Tbsp
chopped parsley

Step-By-Step

1In a large skillet, cook spinach in oil for 5 minutes, stirring frequently, add garlic and cook another minute.
2Add broth, basil, cottage cheese and salt. Stir over low heat until blended.
3Toss spinach mixture, grated cheese and noodles together. Garnish with parsley and serve.
