Pour olive oil into a large pot. Add the diced chicken and cover it with one tbsp cajun seasoning. Stir until chicken is well coated. Add the sausage and cook about 5 minutes.
Add the garlic, onion, peppers and mushrooms. Stir and continue to cook about 5 more minutes.
Add the dry pasta to the pot then pour in the chicken broth. Mix well and cover and bring to a boil. Leave covered and reduce heat to a simmer and simmer 10 minutes. Until most of the moisture has been absorbed.
Add the heavy cream and parmesan cheese stir and cook until cheese melts. Stir in the remaining cajun seasoning and salt and pepper to taste. Garnish with chives.
