Beer Mac and Cheese

Ingredients

2 c
macaroni, elbow
4
slices bacon
1/2 c
sour cream
1
egg
2/3 c
pale beer
1 1/2 c
cheese, freshly grated
2 Tbsp
butter
1/2 tsp
pepper
1/4 tsp
paprika
pinch cayene
salt to taste

Directions Step-By-Step

Sautee bacon until crisp. While waiting for a large pot of salted water to boil.

Once water is boiling, add the noodles and cook until just before done about 6 to 8 minutes. Don't over-cook the noodles or this will end up mushy. Drain pasta and pour back into large pot.

In a separate sauce pan, add the beer, egg and sour cream, beat until well combined. Heat on medium heat - add butter. Stir until the butter has melted.
About 1/4 a cup at a time, add the cheese. Stir until cheese has melted before adding more.
Add the spices and chopped bacon, stir. Pour over pasta and stir to combine.

NOTE - I usually start step 3 after bacon is finished and still waiting for water to boil.
