Grill the eggplant for about 5 minutes until pliable. Spray a 8x8 baking dish with nonstick spray. Layer the eggplant in the bottom of the pan. Mix the cottage cheese and the mozzarella and spread it on top of the sauce. Sprinkle with Parmesan and bake at 350 for 30-35 minutes. Remove and let set for 5 mintues and serve.
