veggie joe sandwiches (for the crockpot)

Vegetarian Sloppy Joes. One more recipe which was given to me by a friend. These are good, healthy, and easy to make. You won't miss the meat. If you can't find tempeh you can substitute firm tofu. Tempeh is more firm and meaty but otherwise very similar to tofu.

Ingredients For veggie joe sandwiches (for the crockpot)

  • 1 lg
    onion, diced
  • 1
    green bell pepper, diced
  • 4 clove
    garlic, minced
  • 2
    carrots, shredded
  • 1 pkg
    (8 ounces) tempeh (substitute firm tofu if necessary), diced
  • 2 Tbsp
    olive oil
  • 1
    envelope dry onion soup mix
  • 1/4 tsp
    cumin
  • 1 can
    (16 ounces) canned pinto beans, drained and mashed
  • 1 can
    (16 ounces) canned refried beans, fat free
  • 1/2 c
    bbq sauce

How To Make veggie joe sandwiches (for the crockpot)

    Briefly saute onion, bell pepper, garlic, carrots, and tempeh in olive oil. Combine all ingredients in slow coker. Cook on low for 4-5 hours. Serve hot on whole wheat buns.
