STICKY COCONUT RICE

long grain rice, soaked in water n stirrd a few times then drain n repeat process a few times until rice water is clearer each time

HEAT UP COCONUT OIL (or veg oil) THEN SAUTÉ ONION 3 MIN SHOULD DO IT. THEN ADD GRATED GINGER N GARLIC ONCE FRAGRANT ADD CURRY PASTE N SLICED CHICKEN N SAUTÉ TILL CHICKEN IS ALMOST COOKD THRU

ADD CHICKEN BROTH, QUARTERD BROCCOLI FLORETS, JULIENND RED PEPPER, CORN. IN A SMALL BOWL MIX BROWN SUGAR N SOY SAUCE...STIR TO DISSOLVE SUGAR.THEN STIR INTO PAN.

ADD BASIL N SIMMER COVERD FOR 25-30 MIN...THEN STIR IN COCONUT MILK N COVER.

WHILE THAI CURRY CHICKEN BOWL IS DOIN ITS THING. PREPARE COCONUT STICKY RICE...I USED 2 CANS OF COCONUT MILK N FILLD THE REST WITH WATER TO MEASURE 4 CUPS ALSO ADDED A TBLSPN OF WHITE SUGAR IN A LARGE SAUCE PAN I MADE THE RICE :)
