Sweet Potato Casserole
I made this for a family Christmas gathering. It was well received and there was none left.
Grease a 13 x 9 casserole dish.
Combine hot sweet potatoes, sugar, eggs, cream, cinnamon, nutmeg, and half of the butter in a bowl. Mix thoroughly with mixer until light and fluffy.
Add mixture to the greased casserole.
In another bowl, combine the Rice Krispie cereal, pecans, walnuts, brown sugar, and remaining butter. Mix until crumbly. Spread over sweet potato mixture.
Bake 40-45 minutes.
I use only pecans in the topping since I am allergic to walnuts and it is just as good. I also "pat down" the sides and make a small trench so it is not as likely to run over the sides.
