My family loves chili beans. I like to make them when it cold and gloomy,like today.I serve chili beans with cornbread or corn chips.My son & husband pile on the toppings,use your favorites. For a quicker version,use can beans and ground beef only. I like to cook my own beans from scratch though. You can add cumin if you like,my family and I don't care for it.

Ingredients For stephanie's chili beans

olive oil

1 lb beef chuck roast,cut in large bite size pieces

1 lb ground beef

1 onion,chopped
-
4 oz can green chili peppers
-
4 cloves garlic,chopped
-
4 oz tomato sauce
-
1 (14.5 oz) can fire roasted tomatoes
-
2 c cooked pinto or black beans,or canned
-
4 c water
-
2 beef bouillon cubes
-
2 bay leaves
-
seasonings:salt,black pepper,chili powder,garlic powder,all to taste

1/4 c corn flour(masa harina)) mixed with 1/2 c cold water

1 c jar chunky red salsa
- TOPPINGS:

shredded jack or colby cheese
-
chopped onion
-
minced green onion
-
hot sauce
-
sour cream
-
chopped cilantro
-
minced fresh jalapeños
How To Make stephanie's chili beans

1In a skillet,drizzle olive oil, heat,add in your cubed beef . Season with salt and pepper. Cook until browned, and drain on paper towels. Set aside. 6. In a large pot, add in some olive oil. On medium heat, add onions & peppers. Add a pinch of salt and cook until softened. Add in your chopped garlic, and cook until fragrant. 7. Add your beef back into the pot, along with your tomato paste, fire roasted tomatoes, water, beef bouillon cubes, bay leaves, and seasonings. Bring to a boil to a rolling boil, turn the heat down to medium low, put a lid on the pot, and cook for 2 hours, stirring once or twice during cooking. Add olive oil and brown your ground beef in a skillet. Drain and set aside. Add ground beef,and cooked beans to the pot. Mix well. In a small bowl, mix together your masa harina and water. Add this mixture into your pot, and stir until chili has slightly thickened.dd salsa,stir well. Taste check for seasoning, and add salt as needed.
