I usually double the recipe because my son-in-law loves this and likes to take it to work for lunch. It's quick and easy to fix and tastes sooo good. Add a pan of cornbread and a salad and you have a delicious meal!

Ingredients For smoked sausage 'n beans

  • 1 lb
    smoked sausage, sliced
  • 1 md
    onion, chopped
  • 2 Tbsp
    canola oil
  • 2 can
    pinto beans, rinsed and drained
  • 1 1/2 c
    water
  • 1 can
    diced tomatoes with mild green chilies, undrained
  • 1 Tbsp
    ranch salad dressing mix
  • 2 c
    instant rice, uncooked

How To Make smoked sausage 'n beans

    In a Dutch oven, cook sausage and onions in oil over medium heat until onion is tender. Add the beans, water, tomatoes and salad dressing mix. Bring to a boil; stir in rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender. Yield: 6 servings.
