Smoked Sausage Gumbo

only tried it once and it was a little spicy for me, but still a really good dish

Ingredients

1 c
chicken broth
1 can(s)
diced tomatoes - undrained
1/4 c
flour
2 Tbsp
olive oil
3/4 lb
polish sausage - cut into 1/2-in pieces
1
medium onion - diced
1
green bell pepper - diced
2
ribs celery - chopped
1
carrot - peeled and chopped
2 tsp
dried oregano
2 tsp
dried thyme
1/8 tsp
ground red pepper
1 c
white rice

Step-By-Step

1sprinkle flour evenly over bottom of skillet.
cook til flour begins to turn brown.
reduce heat for 4 mins.
stir in oil until smooth
2chop celery and carrots
dice onion and bell pepper
cut sausage
3combine broth and tomatoes in slow cooker
add flour mixture to slow cooker
4add sausage, onion, bell pepper, celery, carrot, oregano, thyme and ground red pepper to slow cooker
5stir well, cover and cook on LOW for 4 1/2 - 5hrs
6about 30 minutes before gumbo is ready, prepare rice.

serve gumbo over rice for meal
