Found this in a cooking mag and had to try it. We love it and the only side I fix to go with it is wilted lettuce and onions. Gave it to a friend and she says her family has asked for it so much she is ready to shoot me. I like using the Mexican Corn Bread Mix for this recipe.
Preheat oven following directions on the cornbread mix. In a large skillet brown sausage, breaking up with a fork, as it cooks. Add green pepper and onion. Cook until done. Drain. Return to skillet. Add the beans and tomatoes.
Pour into a 9 x 13 inch baking dish. Cover the mixture with 1 and 1/2 cups of the cheese. Prepare the corn bread mix according to the package. Spread evenly over the cheese. Sprinkle top with the rest of the cheese. Bake following directions on the cornbread mix package until done and the top is lightly brown.
