2 1/2 lb
ground chuck
1 lb
ground pork

garlic cloves finely chopped
1 c
chopped onion
8 oz
tomato sauce
1 c
water
12 oz
beer, not lite
3 Tbsp
good chili [powder

beef bouillon cubes
2 Tbsp
cumin
2 tsp
paprika
2 tsp
oregano
2 tsp
sugar
1/2 tsp
coriander
1 tsp
unsweetened cocoa
1 Tbsp
hot sauce
1 tsp
cornmeal
1 tsp
flour
1 tsp
warm water

Step-By-Step

1BROWN THE MEATS IN A DUTCH OVEN. DRAIN, RESERVING 2 TBLS. PUT THE RESERVED 2 TBLS. BACK IN PAN.

2ADD THE GARLIC AND ONION AND COOK UNTIL TENDER.

3ADD THE OTHER HALF OF THE MEAT, TOMATO SAUCE, WATER, BEER, CHILI POWDER, BOUILLON, CUMIN, PAPRIKA, OREGANO, SUGAR, CORIANDER, COCOA, AND HOT SAUCE. MIX WELL.

4BRING TO A OIL, REDUCE HEAT TO A SIMMER. COVER AND SIMMER 2 HOURS.

5IN A SMALL BOWL MIX CORNMEAL AND FLOUR TOGETHER, ADD WARM WATER AND MIX WELL. STIR INTO CHILI AND SIMMER COVERED ANOTHER 20 MINUTES.
