Ham, Apples and Sweet Potato Casserole

- 1 center slice ham, about 12-16 ounces
- 3 medium sweet potatoes, about 1 1/2 pounds, peeled and sliced 1/4-inch thick
- 2 tablespoons brown sugar, packed
- 4 apples, quartered
- 3/4 cup hot water
1Brown the ham on both sides; place in baking dish. (I use a 13x9 dish so everything can spread out). Spread apples and sliced sweet potatoes over ham then sprinkle with brown sugar. Add hot water. Cover and bake at 350 for about 60 minutes, or until tender. Baste occasionally while cooking. Remove cover last 15 minutes.
