Directions
Cut off top of pumpkin and completely remove the insides of the pumpkin. Brown ground beef and sausage; saute vegetables. Drain grease. Put back in pan; add remaining ingredients and mix together. Put all ingredients inside the pumpkin and bake at 325 degrees for 3 hours. ENJOY!!Using Italian Sausage makes it a little spicier but you can use just regular sausage.

The best part of this is being able to scrape out the cooked pumpkin with the meat-rice-veggie mixture when it's ready to serve...oh, so good! I have a picture of this from when a friend made one for her mother-in-law's birthday dinner party...she gently etched out "Happy Birthday" on one outer side of the pumpkin, then served it on a large silver platter with brightly colored silk autumn leaves strewn around! This is a wonderful meal...you can make other fun options of recipes in a pumpkin...but this one is a keeper...it's SO GOOD!!! Thanks for sharing your recipe!

WOW, have never seen anything like this, sounds awesome for Halloween Parties?? Would definitely use the italian sausage as suggested, love a spicier dish if I'm able to prepare it that way, depending on whom I'm feeding of course! Thank you Stephanie for sharing...still have yet to go to the pumpkin patch...however, Pinched!!
