Fresh Pasta Dough
- 1 lb
- all purpose flour
Make a well in the center and add the eggs.
Beat the eggs with a fork and then begin working the flour into the eggs.
When the mixture resembles a thicj paste, knead by hand for 10 minutes, until it is smooth and elastic, adding more flour as you knead if it's too sticky.
Form the dough into a ball and let rest for 15 minutes, covered or wrapped in shrink wrap.
Roll the dough out with a wooden rolling pin on a lightly floured surface to make a thin circle.
Allow it to dry for several minutes, then cut to desired shape
