Fettuccine Alfredo Weight Watchers

I always saute some mushrooms, scallops, or shrimp in olive oil and add to sauce. Grilled chicken would be very nice with this too.

Ingredients

1 Tbsp
whipped butter
2 tsp
margarine
1 Tbsp
plus 1/12 teaspoons all purpose flour
1 c
1% milk
1 dash(es)
salt, white pepper, ground nutmeg, paprika
1/2 c
part-skim ricotta cheese
1 1/2 oz
parmesan cheese, grated
1 3/4 c
cooked fettucini
1 Tbsp
fresh italian parsley, chopped

Step-By-Step

1In a 2 quart sauce pan, melt butter and margarine over low heat. Stir in flour and cook stirring constantly, for 1 minute. Gradually stir in milk and seasonings.
2Continue to stir until mixture comes to a boil. Remove from heat.
3Stir in cheeses and stir until ricotta is melted.
4Meanwhile cook fettuccine to package directions, drain well.
5Arrange fettuccine in a pasta bowl, and top with sauce and sprinkle parsley on top.
