1season the cube steaks with seasonings. add alittle of the seasoning mixture to the flour. dread in the flour and coat evenly. pan fry the cube steaks until golden brown. put on a cookie cooling rack on a cookie sheet. doesn't have to be all the way done b/c it will keep them warm in an oven until the gravy is done. by that time the steaks will be done all the way through. they will not burn on the outside this way
2slice the onion and mushrooms thinly. add butter to pot and melt then add onion and mushrooms. add salt and pepper and cook till soft. as thats cooking peel and slice the potatoes into half moon shapes about 1/4 inch thick. put aside till later.
3once the veggies are softened add about a spoonful or two of flour. cook for a minute. as it becomes a paste add the chicken stock to make a gravy. you can add water too if you don't want all chicken stock. let it come up to a boil and reduce heat. should thicken gradually. adjust to taste by adding more of the seasonings. add potatoes and cook till tender. can add more chicken stock or water if needed. retaste and adjust seasonings if needed. serve over cube steaks and enjoy.
