The flavor is different from most bean recipes. My Aunt used to fix beans with cinnamon. I loved them. This is my version. Best if made day before and reheated.
dried pink beans
chopped green bell pepper
fresh ground black pepper
1Soak beans overnight in enough water to cover
2Next day, drain beans
3Add fresh water to cover and simmer 1 hour.
4In skillet, saute in olive oil, onion, bell pepper, spices, salt and pepper. Add to beans. Cover with water to about 2" above beans. Stir well. Stirring occasionally,simmer 1 to 2 hours until beans are tender. (For "brothy" beans, add more water. Adjust salt.
