DirectionsSoak beans overnight in enough water to coverNext day, drain beansAdd fresh water to cover and simmer 1 hour.In skillet, saute in olive oil, onion, bell pepper, spices, salt and pepper. Add to beans. Cover with water to about 2" above beans. Stir well. Stirring occasionally,simmer 1 to 2 hours until beans are tender. (For "brothy" beans, add more water. Adjust salt.
