| 1/2 lb | dried pink beans |
| 2 Tbsp | olive oil |
| 1/2 c | chopped onion |
| 1/3 c | chopped green bell pepper |
| 1 tsp | ground allspice |
| 2 tsp | groud cumin |
| 2 Tbsp | ground cinnamon |
| 8 oz | tomato sauce |
| 1/2 tsp | salt |
| 1 tsp | fresh ground black pepper |

Soak beans overnight in enough water to coverNext day, drain beansAdd fresh water to cover and simmer 1 hour.In skillet, saute in olive oil, onion, bell pepper, spices, salt and pepper. Add to beans. Cover with water to about 2" above beans. Stir well. Stirring occasionally,simmer 1 to 2 hours until beans are tender. (For "brothy" beans, add more water. Adjust salt.
