This recipe is from a cookbook I bought at a thrift shop called, Favorite Brand Name Vegetarian Cooking, its a great book even though my family is not traditionally vegetarians.with the meat prices the way they are now I could become one. the chili is really good.

Ingredients For chunky vegatable chili

2 Tbspvegatable oil
-
1 mdonion,chopped
-
2celery ribs,diced
-
1carrot,diced
-
3 clovegarlic,minced
-
2 can15oz.great northern beans,rinsed and drained

1 1/2 cwater
-
1 cfrozen corn
-
1 can(6oz.) tomato paste
-
1 can(4oz.) diced mild green chilies,undrained
-
Tbspchili powder
-
2 tspdried oregano leaves
-
1 tspsalt
How To Make chunky vegatable chili

1Heat oil in large skillet over-medium high heat until hot.Add onion,celery,carrot and garlic;cook 5 minutes or until vegatables are tender, stirring occasionally.

2Stir beans, 1 1/2 cups water, corn,tomato paste,chiles,chile powder,oregano and salt into skillet. Reduce heat to medium-low . Simmer 20 minutes,stirring occasionally.Garnish with cilantro,If desired.
