This was my mother-in-laws recipe and we all loved the way she used the zucchini from the garden.

Ingredients

1 medium
zucchini (seeds removed)
1 medium
onion
2 small
green or red pepper
3 medium
potatoes
2 medium
2 medium tomatoes
1 lb
ground beef or poek
1/4 c
oil
2 tsp
sugar
16 oz
tomato sauce divided
1/2 tsp
oregano, dried
2 tsp
ramano cheese
8 oz
mozzarella cheese
s&p
2 Tbsp
italian parsley

Step-By-Step

1chop veggies and saute in oil, add sugar, 8 oz tomato sauce, S&P and simmer for 10 minutes, add chopped parsley
2brown meat in another pan
3in casserole dish, layer 1/2 c. tomato sauce, 1/2 veggies, 1/2 meat, 1/2 mozzarella. Repeat
4Bake @ 375* for 45 minutes or till bubbly
