Ingredients

2 c
cooked pinto beans, or canned including liquid
1 small
green bell pepper, diced
1 small
yellow onion, diced
2 Tbsp
fresh cilantro, chopped
4 Tbsp
butter
15 oz
coconut milk
2 c
long grain white rice, rinsed
salt and pepper, to taste
1/8 tsp
chili powder
1/8 tsp
celery seed
1/8 tsp
ground coriander
1/8 tsp
nutmeg
1/8 tsp
onion powder
1/8 tsp
paprika
1/8 tsp
garlic powder

Step-By-Step

1Combine all ingredients in a large saucepan and bring to a boil over a medium flame.

2Cover, reduce heat to the lowest setting and simmer 30 minutes. Fluff rice with a fork just before serving.
